<p><span style="color: #008080;"><strong>Ingredients</strong></span></p>
<p><strong>Corn Fritters</strong><br />
525g fresh corn kernels cut from 3 large corn cobs (alternatively use tinned corn kernels)<br />
1 small red onion &#8211; chopped<br />
2 eggs<br />
15g coriander leaves &#8211; chopped<br />
125g plain flour<br />
1 tsp baking powder<br />
sea salt &amp; pepper<br />
vegetable oil for frying</p>
<p><strong>Avocado Salsa</strong><br />
2 ripe avocados &#8211; stones removed and diced<br />
Small bunch of coriander leaves<br />
2 Tbs lemon juice or lime juice<br />
2 Tbs spring onions &#8211; finely chopped<br />
1 tomato quartered, seeded and finely sliced<br />
1 dash tabasco sauce (optional)<br />
sea salt &amp; pepper</p>
<p><span style="color: #008080;"><strong>Directions</strong></span></p>
<p><strong>Corn Fritters</strong><br />
Preheat the oven to 120°C.</p>
<p style="text-align: justify;">Place 2 cups of the corn kernels and the onion, eggs, coriander, flour, baking powder, salt and pepper in a food processor and process until combined. Place in a large bowl, add the remaining corn and stir to combine.</p>
<p style="text-align: justify;">Heat 1 tablespoon of the vegetable oil in a non-stick frying pan over a medium to high heat. When the oil is hot, drop 2 heaped tablespoons of mixture per sweetcorn cake into the pan and cook in batches of three for 1 minute each side.</p>
<p style="text-align: justify;">Drain on paper towels and keep warm in the oven while you are making the rest of the cakes.</p>
<p style="text-align: justify;"><strong>Avocado salsa</strong><br />
Place all the ingredients in a bowl and stir very gently to combine.</p>
<p style="text-align: justify;">Serve with the avocado salsa.</p>

Free range eggs<br />
Bread &#8211; toasted and cut lengthways into 3-4 fingers</p>

In a small saucepan bring water to the boil then turn right down to the lowest heat until just simmering. Lower each egg gently into the simmering water using a spoon and leave for 2- 4 minutes until desired consistency is reached.</p>
<p style="text-align: justify;">Really soft runny eggs &#8211; leave for 2 minutes<br />
White just set and yolk that is creamy &#8211; leave for 3 minutes<br />
White and yolk perfectly set with yolk that is creamy &#8211; leave for 4 minutes</p>
<p style="text-align: justify;">Be careful to watch the clock, so as not to overcook the eggs. Remove the eggs with a slotted spoon and transfer to egg cups. Slice off tops and serve with freshly toasted bread (soldiers).</p>
<p style="text-align: justify;">Why not try vegemite on your toast for a change (soldiers in uniform).</p>

Combine dried fruit and all other ingredients except for the fresh pears and yoghurt in a heavy based saucepan. Bring to the boil, reduce heat, cover and simmer for 30 minutes. Add the diced fresh pears and simmer for 10 minutes. Remove the cinnamon stick and leave the compote to cool.</p>
<p>Serve either warm or cold with the yoghurt.</p>

Preheat oven to 180ºc</p>
<p style="text-align: justify;">Mash bananas in a bowl. Warm the milk, add the baking soda and mix in with the bananas. Set aside. Cream butter and sugar, add golden syrup and egg, mix. Add banana mixture. Fold in sifted flour and baking powder. Pour into greased muffin tins. Bake for 15 minutes.</p>

1 egg<br />
1C milk<br />
butter</p>
<p><strong><span style="color: #008080;">Directions</span></strong></p>
<p style="text-align: justify;"><strong></strong>In a bowl, sift flour. Make a well, break in the egg. Using a whisk, mixing from the centre out, gradually pour in the milk until all ingredients are combined.</p>
<p style="text-align: justify;">In a non stick fry pan, melt a small amount of butter. Pour in enough mixture to coat the entire base of the frying pan and cook on a low heat for 1-2 minutes per side, until bubbles burst on the surface.</p>
<p style="text-align: justify;">For something different, try adding sliced bananas, blueberries or strawberries to the batter in the pan.</p>
<p style="text-align: justify;"><strong><span style="color: #008080;">Serve with any of these toppings:</span></strong></p>
<p>Fresh fruit<br />
Maple syrup or honey<br />
Lemon juice<br />
Frozen mixed berries (strawberries, raspberries, blueberries) gently heated in a pan<br />
Small spoon of vanilla ice-cream</p>
