Makes 6 (double the recipe for extra pancakes)
Ingredients
1C self raising flour
1 egg
1C milk
butter
Directions
In a bowl, sift flour. Make a well, break in the egg. Using a whisk, mixing from the centre out, gradually pour in the milk until all ingredients are combined.
In a non stick fry pan, melt a small amount of butter. Pour in enough mixture to coat the entire base of the frying pan and cook on a low heat for 1-2 minutes per side, until bubbles burst on the surface.
For something different, try adding sliced bananas, blueberries or strawberries to the batter in the pan.
Serve with any of these toppings:
Fresh fruit
Maple syrup or honey
Lemon juice
Frozen mixed berries (strawberries, raspberries, blueberries) gently heated in a pan
Small spoon of vanilla ice-cream
